Smoked Salmon Breakfast Sandwich

Happy Wednesday loves! I hope it’s been a great week so far. It’s going by so quick, we’re already in middle of July!

I’m back again with a recipe which I created a few years ago and since this quarantine started, I’m using this recipe again!

The best thing is that it is very customizable in case you don’t have a specific ingredient!

Ingredients for my Smoked Salmon Breakfast Sandwich

*2 slices of bread ( I used Oroweat Organic 22 Grain and Seed)

*1 egg

*1 avocado

*Bonjour Kefir Yogurt Mint & Dill or cream cheese or Labne

*2 slices of smoked salmon

Directions:

  1. Toast the bread any way you like
  2. Turn on the skillet and scoop out a teaspoon of ghee and a teaspoon of butter.
  3. When it starts to sizzle, place the egg in the skillet and let it cook.
  4. I prefer my eggs to be a bit over easy so when I see it as over easy I turn off the stove.
  5. Spread some cream cheese, or spreadable cheese of choice on one side of bread.
  6. On the other bread, spread the avocado.
  7. Place the smoked salmon on the cream cheese side and place the egg on the other bread.
  8. Put them together and there you go!

PB&J French Toast with Vital Proteins Collagen

Hello my loves and happy Wednesday!

I hope you all are having a great week so far!

It’s been a long while since I posted a recipe let alone never blogged about collagen.

I first was introduced to Vital Proteins a few years back at the Expo West in Anaheim, California as well as another blogger by the name of The Skinny Confidential (hi Lauren!)

Vital Proteins has so many different products on their website which includes collagen water, collagen mini powders, collagen creamers, immunity boosters, collagen lattes, collagen bars, matcha powders and even workout powders.

Benefits of Collagen: 

Did you know collagen helps strengthen nails, hair, skin, bones and joints and as we get older, our bodies are not able to synthesize collagen on their own and a lot of our food intake doesn’t include collagen.**

How to Use:

Simply put into your waters, coffees, beverages and food recipes. The best thing is that this specific kind has no scent and can easily dissolve into water.

My PB&J French Toast Recipe:

* 4 slices of bread

* 1 scoop of Vital Proteins Collagen Peptides

* 1 egg

* 1/4 cup of milk

* pinch of salt

* cinnamon

* 2 tablespoons of butter or ghee

Spread peanut butter and jelly on the bread as if you were making a sandwich.

Whisk egg, milk, salt, cinnamon and collagen powder.

Gently place the sandwich into the egg mix and make sure you get both sides saturated.

Place 1 tablespoon of butter on the pan and wait for it to sizzle.

Using your spatula, place the sandwich in the pan and let it cook for about 3-4 minutes then turn over and wait a few minutes again.

With the other 1 tablespoon of butter, again place the butter in the pan for the next batch of french toast.

When it’s all said and done, sprinkle powdered sugar and some maple syrup on top.

I wanted to do a little Throwback Thursday for you!

Even though I posted this a few years back, I think it’s worth it to bring it back! I still make this a few times a month!

Shout out to Village Bakery for reminding me of this post!

I figured I would try something new out and post a few recipes that I love.

I tried making this spicy Asian wings sauce just for fun and ended up, I love making it now! It’s fairly easy and quick.

FYI: I usually just eyeball the measurements of the ingredients.

Ingredients:

1 lemon

1 Tbsp Sesame Oil

1 tsp rice vinegar

1/2 tsp of molasses (I used black)

1 Tbsp Kikkoman Roasted Garlic & Herbs Marinade (you can just use soy sauce)

1 Tbsp Pepper Sauce (I used Kakadu Wild Fire Pepper Sauce)

1 Tbsp Lawry’s Mexican Chile Limon marinade

My Recipe:

I had chosen to get the Beefless Tips but at the same time, I didn’t just want to eat that. So I got creative and here’s what I came up with!

Paramesan Pasta and I  sauteed veggies (including red bell peppers, spinach, brocolli, kale, green beans and garlic) with the Beefless Tips. Oh and I added a little Korean BBQ sauce to the veggies! I wanted to add some color to my dish so I added a cucumber, some colored cherry tomatoes and black olives on the side.

My Review:

I personally liked it because I added flavors to it. It couldn’t come in a better time for me! It being Lent as well, it was the perfect time to get chosen for this mission. It really does cook really quick, mine only took about 4-5 minutes. It’s easy to make and healthy and especially time efficient! Especially for those times that you don’t have enough time to cook a meal.
